Spitters are a possible evolution of Infected Villagers, belonging in the Evolved tier. They are defined as a ranged mob by the config.
Spawning
Spawned when an Infected Villager gets an evolution point by killing a mob and its evolution timer begins. If the evolution succeeds, they have a 30% chance to become a Spitter.
Spawned from Arena Tendrils during the third wave of a raid.
Spawned from Vigils during the second and third waves of a Vigil raid.
Spawned from a Howitzer's large Flesh Bomb.
Unique Behavior
The Spitter will shoot corrosive projectiles at targets. It has two states of shooting. Sniper mode and minigun mode. When in sniper mode, the Spitter will shoot acid projectiles that inflict the Corrosion II effect for 15 seconds. If its target gets within ~5.66 blocks from the Spitter, it will switch to minigun mode, and shoot smaller corrosive balls 8x faster than sniper mode. If the target is hit by a corrosive projectile while they already have Corrosion, the amplifier will be increased by 1.
If a threat is standing in water, the Spitter will not be able to detect it.
20% of Spitters are variated. The Spitter has two variants, meaning a 10% chance for each variant.
The Bomber Spitter shoots explosive tumors that leave behind lingering clouds of Corrosion II for 30 seconds. It shoots around 50% - 60% slower than the base variant. The Bomber Spitter doesn't have a minigun mode.
Bile Spitters shoot bile projectiles that inflict bile effects (Blindness, Weakness, and Slowness I for 5 seconds and Mining Fatigue I for 10 seconds.) It shoots around 25% - 50% slower than the base variant. The Bile Spitter doesn't have a minigun mode.
Behavior
Spitters are ranged combatants, attacking mobs with Infected forms, golems, and most hostile mobs.
Spitters have a 5% chance to drop a Scent upon death.
When killed, have a chance to place a small short-lived Mycelium Infection area effect cloud.
Has a follow range of 32 blocks.
Spitters will attempt to group together in hordes with other Evolved.
Infected will follow Spitters, who themselves will follow Hyper Evolved and Calamities.
Can perform low leaps/dashes to chase prey quickly through water.
Able to use kill points to give themselves buffs, such as strength or speed if the target is running away. They can also give themselves regeneration if they are low on health.
Capable of breaking glass and leaves.
Have a damage cap of 1/3 of their health on hard mode.
Present a weakness to the cold, like all spore mobs.

Due to the Spitter not having any eyes, it cannot see but instead uses the tentacles in place of its nose to smell its targets. This is also why it cannot sense targets in water; it can't smell them.
